Things To Bake – Rainbow Cake

Brighten up your day with a yummy slice of rainbow cake…



  • 12g unsalted butter
  • 225g plain flour
  • 150g caster sugar
  • 3 medium eggs
  • 1 tsp baking powder
  • food colouring
  • 350g icing sugar
  • 750g cream cheese


1. Mix the flour, sugar, milk and butter together in a bowl, then beat in the eggs. Divide the mixture evenly into 6, to each add a different food colouring and mix until smooth. 

2. Pour each of the coloured mixtures into greased 20cm cake tins and bake in a preheated oven 180c for 12 minutes. 



3. Leave the sponges on a wire rack to cool. Once cool, cut off the outer layer of the sponge to reveal the coloured sponge.



4. Beat the cream cheese with a whisk, once smooth sift in the icing sugar. Place the bottom layer of sponge on the plate and then ice the top, then place the next layer on top. Repeat for all layers of sponge until you have a stack as below.



5. Spread the remaining icing over the sides and top of the cake and decorate as you wish. Then enjoy!
